Assumptions and calculation notes
Use the same unit throughout. Incoming stock is assumed to arrive at the end of lead time. Check any shortage before delivery separately. Shelf-life risk is an estimate at arrival, not a food-safety decision. Prep quantity is a scenario; check actual demand and ingredient shelf life.

How this is calculated
The scenario assumes steady spending, four weeks per month and a user-selected buffer. It is not a minimum-order recommendation. Review demand, stock levels and delivery reliability.
Daily spend = weekly spend / 7. Stock cover = daily spend × lead time × 1.15. Excess purchases = weekly spend × 4 × excess rate × outlets.
Scenario assumptions
The starting buffer and colour bands are illustrative. No single buffer suits every ingredient, supplier or outlet.
Illustrative scenarios, not industry standards.
How each tool works & FAQ
Is this the stock currently held?
No. A stock count is needed to value stock on hand. This uses spending and an assumed excess-order rate.
How do I choose an excess-order rate?
Compare purchases with recorded use over a suitable period. If the rate is unknown, use sample values only.
